Jeremy Pacheco | Executive Chef | The Hermosa Inn in Paradise Valley, Arizona The first time Jeremy Pacheco left Las Vegas, he and his wife decided they’d never go back. Pacheco laughed about it. “You know some situations,” Pacheco said. “They called me after I’d been here about three years.” Here, meaning The Hermosa Inn, and some situations, meaning the offer of executive sous chef of Wynn Las Vegas and Encore. This career steppingstone, however, had a string attached. “Before that could happen,” Pacheco said, “they asked me to run the three-meal restaurant, Society Café.” The same restaurant he left off at, as chef de cuisine, during his first time in Las Vegas. Pacheco’s journey from the Salt River Valley to the Las Vegas Valley started some dozen years ago as chef de cuisine of SW Steakhouse Wynn Las Vegas, working under Executive Chef Eric Klein. Klein previously worked at Wolfgang Puck’s Spago for a decade, and it was not unusual for Pacheco to catch Puck and other culinary glitterate, like Daniel Boulud, in the kitchen. From there, Pacheco advanced to Tournant Chef at Encore and Wynn Las Vegas. Pacheco got a chance to develop his public persona then.
