Signature Grill | JW Marriott Tucson Star Pass, Executive Iron Chef Danny Perez | Tucson, Arizona A signature characteristic of an Iron Chef is the ability to transform ingredients in creative ways. No surprise, then, to find this qualifier alive and well at Signature Grill. No surprise, because Executive Chef Danny Perez, assisted, in part, by the restaurant’s sous chef, Carlos Guerrero, won last year’s Tucson Iron Chef challenge. Rod LeDesma, executive chef at Primo, also assisted Perez. They expect to do a repeat performance on June 26th. “The intent down there is to do things completely the right way,” said Perez about Signature Grill. “There’s nothing on the menu that is complicated. That’s because the simple approach of being able to have fresh product to do something good is there.” The surprising part is what they do with these simple and good ingredients. The dishes have classic foundations—like Caprese, Bacon-Wrapped Scallops, Caesar Salad, chicken, burgers, etc. The kitchen, however, includes not-so-classic-ingredients culled from Oaxaca, Native American, and Southwestern cuisines. And they combine the flavors skillfully to transform the ingredients into dishes a notch above in taste and quality.
