Synopsis – Foodies West, Navio restaurant, Ritz Carlton Half Moon Bay, California

Designed to look like the inside of the hull of a ship, Navio (Portuguese for “ship”) gives a hat tip to the Por­tuguese sailors and shipbuilders who settled the area. At dinner time, Navio lives up to its name and serves what it calls Ocean Cuisine. And, of course, there’s that sensational produce grown right outside Navio’s doors. The real reason is Executive Chef Xavier Salomon. Besides being an expert in sauces, a talent he learned from his fa­ther, a Maîtres Cuisiniers de France and Michelin one-star chef, and passed down to his kitchen, the fellow Maîtres Cuisi­niers de France and Michelin triple-star chef knows the rigors required to run a destination restaurant. And that’s exactly what he expects Navio to become under the creative genius of Chef Tanaka.
