That spiritual concept got the scientific stamp of approval in 1753 when Carl Linnaeus, the botanist who developed binomial nomenclature, named the cacao tree, Theobroma cacao, or “cacao, food of the gods.” The cacao seed, which produces chocolate, contains more than 500 chemical compounds. One, a bitter alkaloid called theobromine, is the seed’s chemical marker and magic-maker. Chocolate’s theobromine can quicken the beat of a heart, yet relax the smooth muscles, which includes blood vessels. Besides having the ability to increase theta brain waves, reduce heart disease risks by a third, and prevent tooth decay (we are not making this up), most people could care less about these significant health benefits. They just like chocolate. Which means no pastry shop will ever be found without it. Chocolate expert, Carolina Gavet, who has worked in premium chocolate since 2005, has followed the cacao bean from cacao farm to table. Gavet spent more than seven years at Valrhona Chocolate before taking her present position as marketing manager for Chocolate Stars USA. The company, created by Alain Voss in 2013, markets fine chocolate brands. “We travel around the world to find that unique chocolate or confection,” Gavet said. “Then we work very close with the producer to perfect the recipe, create the perfect packaging and develop a sales-marketing and communication strategy to do a proper product launch in the U.S.”
